The Perfect Wife
The perfect wife. That’s me. It didn’t used to be this way. In fact up until a couple of weeks ago I might have been voted world’s worst wife, but not anymore. Nuh uh. It’s all changed now. You see, this running my own business thing while being mom to an energetic six year old boy has sort of taken over everything. Particularly during my busy season, I find I just work all day, spend time with Dusty, inhale whatever dinner Tony has lovingly prepared, put Dusty to bed and then back to work. Where is Tony in this equation. The answer is either nowhere or silent servant.
So, now add puppy to the equation and you can imagine that Tony had some real fears of being the lowest rung on the ladder, beneath dog. I decided to take some positive action. The answer was right in front of my eyes. Simple remedy for a neglected husband. Cook. Food is very important to Tony. He thinks about dinner when he wakes up and breakfast as he goes to sleep. By the looks of him I believe he was born this way. I actually like to cook. I just forgot that about myself. I came to the conclusion that if I can’t put dinner on the table then what’s it all about. For a few days I went into extremist mode and cooked, washed the dishes and did the shopping. Tony just silently shook his head, tried to argue and then realized it was fruitless. Things have balanced out some. I’m not batting 100, but maybe 80.
Served here are sweet potato pancakes, yellow beets with goat cheese and local brussel sprouts. Here’s the recipe for the sweet potato pancakes which we eat with apple sauce and sour cream. Bon Appetit !
2 cups mashed sweet potato, 4 tsps, flour, 1 tsp curry powder, 1 teaspoon nutmeg, 2 eggs, half an onion chopped fine, salt and pepper.
Just shmush it all together and refrigerate for an hour. Then form into pancakes and fry them up in a bit of oil or butter or a mixture of the two. I recommend medium heat and give them a few minutes on each side. Keep them warm in the oven as you prepare the rest.
